Peppermint-Chocolate Sandwich Cookies leap out as a Giada recipe for their plentiful application of chocolate, yet the fact that this recipe uses store-bought sugar cookie dough makes me wonder if Sandra Lee had a hand in their creation. After all, isn't Giada De Laurentiis supposed to be an experienced pastry chef?
However, if your cookie tastes run more towards decorating (or eating) than baking, take a second look at today's cookie. They're simple, with most of the effort devoted to the ganache filling and chocolate glaze. Use parchment paper to roll the cookies out and you won't even make a big mess.
